Nebbio elevates every dish with its elegance. It shines over a risotto alla marinara, embraces the softness of fresh cheeses, and refreshes simple vegetable salads. On the grill, it enhances the delicacy of white meat. And for those who love daring pairings…try it with cantucci biscuits dipped in oil: a surprising and unforgettable experience.

The Nebbio oil reveals itself with a gentle yet decisive character. Its fruitiness is balanced, with light notes of bitterness and spiciness that dance on the palate. The dominant aroma is that of fresh almond, enriched by delicate hints of grass, tender leaves, and a whisper of artichoke. A taste that tells of land, time, and care.

A rare and ancient treasure of our land. The Nebbio is a native cultivar with deep roots in history, once flourishing across the Vasto area until the great frost of 1956 nearly erased it from memory. Today, only a handful of plants survive, guardians of a tradition too precious to be lost.

Its growth is upright and elegant, its canopy dense and vibrant – like a green crown that speaks of resilience. In 2025, 490 plants were lovingly recovered and shaped in the traditional polyconic vase form. That same year, the Nebbio was honored as a SLOW FOOD Presidium, a recognition that seals its cultural and agricultural value. After a long search, I have finally found this extraordinary variety. Now my only task is to follow its true nature: to gift us its generous fruit.
